GLUTEN FREE CHICKEN NOODLE SOUP
Serving: 6-8
Ingredients:
Add broth, cut up chicken, diced carrots and onion to pot, mashed garlic, sprinkle with seasoning. Bring to a boil, then simmer for 2-3 hours.
(You can also do this in a crockpot)
15 minutes before you are ready to eat, make noodles separate by following package instructions. After noodles are cooked and drained add to pot with other ingredients.
The yummiest soup for a freezing cold day.

- 2-3 Cartons of Organic Chicken Broth
- 3-4 Chopped Carrots
- 1/2 Onion
- 1 pkg of Brown Rice Pasta (spirals)
- 3-4 cloves of garlic
- Salt and Pepper to taste
- Thyme, Basil, Peppercorns, (Whatever seasoning you like) I just add about 1/4 to 1/2 tsp

Gluten-free Meatballs
Ingredients:
- 1lb ground beef
- 1/4 cup milk of choice (we use rice)
- 2 tsp garlic powder or 2 crushed cloves
- 6 fresh basil leaves
- 1/4 tsp salt
- 1/4 tsp cumin
- 1/4 tsp cayenne pepper
- 1 piece of gluten free bread (not toasted) cut in strips
- 1 egg
- 1/4 cup onion (we omit this because of allergies)
- I would add some oregano and pepper but my guy is allergic to those.
Pre-heat oven to 400
Add all ingredients into food processor or mixer. Mix but don't process too long or it will get way too soggy.
Make balls out of mixture and stick on a sil-pat on a baking sheet. (make sure the baking sheet has sides as grease will run off and turn your house into a fireball smoking pit, not that it has happened to me. :)
Bake 15-18 minutes (I add mine to organic tomato sauce, which has hardly any sugar, otherwise I make my own with tomato sauce and tomatoes, spices, and some veggies like zucchini and squash.)
Grant's Natural Recovery Drink (for those who need to put electrolytes back in their body without the artificial sweeteners)
- Ingredients:
- 1 lemon
- 1 lime
- 1/4 tsp sea salt
- 12 drops of stevia or TBS honey
- 12 ounces of water
Protein Bars
- Ingredients:
- 1 cup of ingredients below:
- Peanut butter
- Honey
- Gluten-free oats
- Dark chocolate chips
- Craisens (optional)
- (only)1 scoop of protein powder NOT 1 cup!
Directions: mix all ingredients together, pat down in a casserole dish and keep cold in refrigerator.
WARNING: these are delicious, but super high in calories. Only eat bite size. Perfect for pre/post workout.
White Bean Dip
Put it all in food processor for about a minute. DONE Served with celery, carrots and black bean chips (whole foods) *g allergic to corn *One tip is to cut up all the carrots and celery or whatever veggies you have bought. This way you will eat it. I don't know how many times I have bought a ton of veggies to only have them sit in my fridge and spoil because no one took the time to wash and cut them up. |
Skillet Egg Frittata
One of my favorite breakfast recipes.

Iced Paleo Pumpkin Muffins
It's FALL, thank goodness! And even though it is still 80 degrees outside, at least its not 100. We are are full on baking pumpkin things around here. As you know my little boy is a picky eater but he loves him some pumpkin muffins. So I searched the internet and experimented and I found a great recipe. It's like the muffin fairies are shining down on me this week. Because I also found the banana nut muffins this week. What makes this recipe really, really good is the the icing you add to the top. I don't add the icing until I am ready to eat a muffin, otherwise I think they get soggy. The icing is more like a glaze. I put the icing in the fridge until ready to serve. Warm it up in the microwave for 40 seconds and spread it on each time you pop a muffin in your mouth, which will be alot. I made a double batch. I found the muffin recipe at Paleoplan.com and experimented a bit with the icing.
Makes 6 large muffins.

Paleo Banana walnut muffins
I have a hard time finding Paleo muffins that arn't too eggy or too dry. So I feel like I try over and over again to find a muffin that tastes great. Today I found one...My LUCKY DAY and yours.
I was Suzy Homemaker and took them to my husband's office to share. I even took them in a Bree Vandekamp basket, which is not even mine. (such a housewife poser, sorry I'm not sorry) Without further ado here is the recipe.. I ADDED 1/2 cup of chopped walnuts and 1/4 honey. Papa's cookies
I have found the greatest paleo cookie. It is gluten free, dairy free, and sugar free (except for honey). However, my father-in-law is on a super restrictive diet. He can only have almonds every 4 days. No eggs, no dairy, and no sugar not even honey. So we had to come up with something creative for him so he could have his yummies. (Papa's recipe in quotations)
Pre-heat oven to 350. Combine all ingredients in a mixer until throughly blended. Drop by tablespoons ont a greased or silpat baking sheet. bake 12-15 minutes.
- Ingredients:
- 1 cup raw almond butter or sunflower seed butter (homemade cashew butter: 2 cups of cashews, 2-3 TBS olive oil, 3-4 drops of stevia/put in processor FOREVER until it is smooth)
- 1 egg (egg replacer)
- 1/4 cup raw honey or maple syrup (8 drops of vanilla stevia)
- 1/2tsp vanilla
- 1/2tsp cinnamon
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3 cups of total mix ins: such as apples, walnuts, chocolate chips, flaxseed, coconut flakes.
- For papa we did (walnuts, apples, and coconut flakes.)

Brown meat, garlic, onion cook quinoa When Quinoa and meat are done mix together with any other veggie you want... I did spinach, bell peppers, tomatoes and basil, (Because I am addicted to basil) Bake at 475 for 15 minutes. Last 5 minutes sprinkle feta cheese on top for you paleo cheaters. |
